Mexican Beef and Rice Bake


Mexican Beef and Rice Bake

5-6 C cooked rice
1 lb. ground beef
1 onion
1 (10 oz) can tomatoes with green chilies, undrained
1 (8 oz) can tomato sauce
½ C water
Adobo to taste
Nonstick cooking spray
1 C cheddar cheese, shredded

Brown ground beef and onion in a large skillet until beef is cooked though and onion is tender. Stir in rice, tomatoes, tomato sauce, water, and adobo. Turn heat down to low and simmer for about 5 minutes. Spray a 9x13 inch baking dish with nonstick cooking spray and pour in skillet contents. Top with cheese and bake at 375 degrees for 20 minutes or until cheese is melted and bubbly.
