Happy Homemaker Monday

The weather outside is::::
57 degrees at almost 5pm. It's supposed to rain tomorrow.

On the breakfast plate this morning::::
I didn't have breakfast.
As I look outside my window:::
I see my tree and my chicken coop. It's getting dark.
Right now I am::::
Getting ready to make dinner


As I look around the house::::
I need to clean. I skipped today because I was busy doing Christmas baking and my husband had a doctors appointment.

Taco Pork Chops

Taco Pork Chops
4 boneless pork chops
1 onion
1 (8oz.) can tomato sauce
1 C water
1 pkt. taco seasoning

In a skillet brown pork chops with the onion. Add the tomato sauce, water, and taco seasoning. Bring to a boil and then reduce heat, cover and let simmer for about 20 minutes or until cooked through.

Crockpot Apricot Chicken

4 boneless, skinless chicken breasts
1 (8oz) bottle of Russian Dressing
1 (12oz) jar apricot jam

Place chicken in a crockpot. Mix dressing and jam together and pour over the chicken. Cook on low 4-5 hours

Crockpot Broccoli Beef

Crockpot Broccoli Beef

2 lbs beef, sliced into strips 
2 C beef broth
1 C soy sauce 
1/2 C brown sugar
4 cloves garlic, minced
4 Tbsp cornstarch
1 pkg. frozen broccoli

In a bowl combine broth, soy sauce, and brown sugar. Stir together until sugar is dissolved. Place meat in the crockpot and pour the sauce over. Sprinkle garlic on top. Cook on low for about 6 hours. 20-30 minutes before serving remove some cooking liquid and mix with the cornstarch. Pour into crockpot and stir. Add in the broccoli and serve once the broccoli is warmed.

Vegetarian Biscuits and Gravy

Vegetarian Biscuits and Gravy

4 frozen meatless sausage patties 
1/3 C flour
2 Tbsp oil
2 C cashew, almond or soy milk, unsweetened, regular
Pepper to taste

Microwave frozen patties for about a minute. Break apart. Heat oil in a skillet and add patties and heat them up a little bit. Add the flour and stir to combine. Add the milk slowly and whisk if needed to make smooth and cook to thicken to your liking. Season with pepper and serve.

Crockpot Chicken Alfredo Lasagna

Crockpot Chicken Alfredo Lasagna

12 lasagna noodles
2 (15 oz.) Alfredo sauce
1/3 C water
15 oz. ricotta cheese
Italian seasoning to taste
2 C mozzarella cheese
3 chicken breasts, cooked and diced
Nonstick cooking spray

Spray crockpot with cooking spray. Layer the following in the crockpot. Make sure the noodles are covered by sauce and cheese.
Layer 1-
break 4 uncooked lasagna noodles to fit into the crockpot and place them in the bottom
Top with 1/3 of Alfredo sauce, 1/2 of the chicken, 1/2 of the ricotta cheese, season with Italian seasoning, end with a little bit of cheese
Layer 2-
4 lasagna noodles-broken to fit
1/3 Alfredo sauce
1/3 C water
Remaining chicken
Remaining ricotta
Season with Italian seasoning
A little bit of mozzarella
Layer 3-
Remaining noodles, broken to fit
Remaining Alfredo sauce
Remaining mozzarella

Cover and cook on low for 4 hours.

Kielbasa and Sauerkraut

Kielbasa and Sauerkraut 
1/4 C butter
1 large red onion, diced
1-2lbs kielbasa 
1-2lbs sauerkraut, drained and rinsed
Apple juice as needed

In a skillet melt the butter and sauté onion until soft. Add the sauerkraut and mix with the onion. Add kielbasa on top and the add apple juice so it's not dry. Simmer about 20 minutes on low heat or until sausages are done. Add more Apple juice if needed during cooking.

Crockpot Beef, Tomatoes and Peppers

1 1/2 lbs beef, cut up into bite size pieces
No salt seasoning
2 Tbsp oil
3 Tbsp tomato paste
1 (15oz) can stewed tomatoes, undefined
3 Tbsp Worcestershire sauce
1 bag frozen peppers and onions

Sprinkle meat with seasoning and heat oil in a skillet. Brown meat and place a crockpot. In a bowl combine tomato paste, stewed tomatoes, and Worcestershire sauce. Pour over the meat. Pour bag of frozen peppers and onions on top. Cover and cook on low for 6-8 hours.

Crockpot Goulash

Crockpot Goulash

1 lb. ground beef
1 onion, chopped 
1 bell pepper, chopped
4 garlic cloves, minced
Italian seasoning to taste
Salt free seasoning to taste
1 jar spaghetti sauce
1 (8oz) can tomato sauce
8 oz elbow macaroni, cooked according to package directions

In a skillet cook ground beef with the onion, green pepper and garlic. Season with no salt seasoning and Italian seasoning. Add in the spaghetti sauce and tomato sauce. Gently mix in the cooked macaroni. Spray a crockpot with nonstick cooking spray and pour mixture into the crockpot. Cook covered for 2-3 hours on low.

I made this in the morning and when I got home in the afternoon put it on to "cook".

Macaroni Salad

Macaroni Salad

Dressing:
1 C mayonnaise 
1/2 C sour cream
2 tsp dijon mustard
4 tsp sweet pickle juice
1 Tbsp sugar
No salt seasoning to taste

8 oz. elbow macaroni
2 green onions, sliced
4 celery stalks, sliced
4-6 sweet pickles, chopped
4 hard boiled eggs, chopped
1 C pimento stuffed olives, sliced in half
Dry dill to taste

Cook macaroni according to package directions. Set aside and let cool. For the dressing, in a bowl mix together the mayonnaise, sour cream, mustard, pickle juice, sugar and seasoning. In a large bowl, add the macaroni, green onion, celery, pickles, olives and dressing. Mix. Fold in hard boiled eggs and season with dill. Chill until serving.
