French Bread Pizza

French Bread Pizza
1 loaf French Bread
1 (6 oz) pkg. pepperoni
1recipe pizza sauce
½ lb mozzarella cheese

Heat oven to 350 degrees. Slice bread in half lengthwise and place on a baking sheet. Spread with pizza sauce, top with cheese and pepperoni. Bake until cheese is melted about 15-20 minutes.

Homemade Pizza Sauce
Italian seasoning to taste
1 (6 oz) can tomato paste
2 (8 oz) cans tomato sauce
Fresh minced garlic to taste

Combine all ingredients in a small saucepan and bring to a boil, simmer for about 5 minutes and then use to top pizza.

Rosemary Pork and Almond Green Beans

Rosemary Pork
1 (3 lb) pork roast
½ C. water
Seasoning salt to taste
2 sprigs fresh rosemary

Place pork in a crockpot with water. Sprinkle to taste with seasoning salt. Place rosemary in water next to pork. Cook on low 8-10 hours or until done.

Almond Green Beans
1 (16 oz) pkg. frozen green beans
Sliced almonds to taste
Butter to taste

Cook green beans as directed on package, before serving toss with butter and almonds.

Cream Cheese Chicken


Cream Cheese Chicken

6 boneless skinless chicken pieces
2 Tbsp butter, melted
Salt free seasoning
1 (0.7 oz) pkg. dry Italian salad dressing mix
1 (10 oz) can cream of chicken soup
1 Tbsp dry minced onion
1 (8 oz) pkg cream cheese
1 (8 oz) pkg pasta

Place chicken in a crockpot and brush with melted butter. Sprinkle with salt free seasoning and Italian dressing mix. Cover and cook on low for 4-5 hours or until cooked through. In a saucepan combine soup, onion, and cream cheese. Cook over medium heat, stirring constantly, until smooth, pour over chicken in the crockpot and let cook while pasta is prepared. Prepare pasta according to package directions. Serve over pasta.

Honey Mustard Chicken, Dutch Green Beans, and Garlic Mashed Potatoes

Honey Mustard Chicken

½ C salad dressing or mayonnaise
2 Tbsp. Dijon mustard
1 Tbsp honey
6 boneless, skinless chicken pieces

Combine everything except chicken in a small bowl. Place chicken on a grill or in the broiler and brush with sauce. Grill or broil until done while continuing to baste with sauce throughout the cooking time.


Dutch Green Beans

1 (16 oz) pkg. frozen green beans
1 med. onion, sliced
Salt and pepper to taste
1 tsp. cornstarch
½ C water
½ C vinegar
½ C brown sugar

Cook green beans as directed on package, adding the onion, salt and pepper at the beginning of the cooking time. In a small bowl dissolve cornstarch in the water. Add vinegar and brown sugar. Drain cooking water and add mixture from the small bowl to the pan, bring to a boil and allow to thicken a bit before serving.


Garlic Mashed Potatoes

2 lbs. potatoes, peeled and quartered
2 Tbsp. chopped garlic
½ C milk
2 Tbsp. butter
¼ C. sour cream

In a large pot bring potatoes in enough water to cover to a boil. Reduce heat to med. Cover and let simmer for 20 min or until cooked though, drain. Meanwhile in a saucepan over med low heat, cook garlic and milk for 10 min, stirring occasionally. Add butter and stir until butter is melted. Mash potatoes, stir in milk mixture and sour cream.

Happy Homemaker Monday

The Weather:::
Its 54 degrees right now. Supposed to have a high of 63degrees today. Expecting rain this week. I love it. I just want to make hot chocolate and sit by my fireplace.

Right now I am:
Trying to figure out what to do with my day. I have to deal with my mom's medications being all messed up since she was released from the hospital. That's the most important thing for today.

Thinking:
I wasn't ready for Christmas but now that my mom has been released from the hospital I am and it's coming quickly.

Stuffed Potatoes


Stuffed Potatoes

6 baking potatoes
1 lb. ground beef
1 small onion, chopped
Salt free seasoning
1 (4 oz) can sliced mushrooms
Swiss cheese, shredded, as needed
Cheddar cheese, shredded, as needed
Sour Cream for garnish if desired

Bake potatoes in a 400 degree oven for 1 hour or until cooked through. In a skillet brown ground beef with the onion until beef is done and onion is tender.  Season to taste.  Add mushrooms and stir to combine. Slice potatoes open and fluff insides with a fork. Top each potato with meat mixture and cheese. Garnish with sour cream if desired.
