Crockpot Garlic Cheese Fish Fillets

6 fish fillets
1/4 C mayonnaise
1/2 C shredded cheddar cheese
5 Tbsp. lemon juice
4 cloves garlic, minced
Pepper to taste

Combine the mayonnaise, cheese, lemon juice, garlic and pepper in a bowl. Dip each fish fillet into sauce to coat then wrap in a foil packet tightly. Place all the packets in a crockpot, stacked on top of each other. Cook on low for 3-4 hours. Fish is done when it flakes easily.

Chicken Taco Bake

Chicken Taco Bake

4 C cooked, chopped chicken
1(14oz) jar black bean and corn salsa
5 small flour tortillas cut into bite size pieces
2 C shredded Mexican blend cheese plus additional for top if desired
Nonstick cooking spray

In a large bowl mix the chicken, salsa, tortillas, and cheese together and pour into a
baking dish that has been sprayed with nonstick cooking spray. Cover with foil. Bake at
350°F for 30-45 minutes or until hot and bubbly.

Apple Walnut Cake

1 stick butter, melted
1 C sugar
1 egg
2 medium apples, peeled and chopped (about 1 1/2 C)
1/2 C walnuts
1 C flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1/2 Tbsp cinnamon
Nonstick cooking spray

Spray a 9 inch square baking pan with nonstick cooking spray. In a large bowl, beat the butter, sugar, and egg. Stir in apples and nuts. Add flour, baking soda, baking powder, salt and cinnamon, mix. Batter will be thick. Pour batter into the baking dish and spread out until even. Bake at 350°F for 45-50 minutes or until a toothpick comes out clean.

Crockpot Pepper Steak Spaghetti

Crockpot Pepper Steak Spaghetti

2 lbs. stew beef
1 (28oz) jar pasta sauce
1 onion, sliced
1 green pepper, sliced
8 oz spaghetti, cooked and kept warm

Place everything except spaghetti in a crockpot and cook 6 hours on low. Serve over cooked spaghetti.

Ham and Broccoli Rolls

Ham and Broccoli Rolls

6 slices deli ham, cut into thick slices
1 bunch broccoli, cut into florets and cooked until tender
2 Tbsp. butter
2 Tbsp. flour
2 C milk
1 tsp. mustard
1 C shredded Swiss cheese
Salt free seasoning to taste

Melt butter in a saucepan. Whisk in flour and gradually add the milk, whisking until smooth. Stir in the mustard and cheese. Cook until thickened and cheese is melted. Season to taste. Assemble the rolls by placing some broccoli in the middle of a slice of ham and roll it up. Place seam side down in a 9x13 inch baking dish. Pour sauce over the top of the rolls. Bake at 350°F for 20-30 minutes, or until hot and bubbly.
