Scalloped Potatoes and Ham


Scalloped Potatoes with Ham

Nonstick Cooking Spray
6 potatoes, peeled and sliced thin
½ C flour
Salt and pepper, to taste
1 small onion, diced fine
2 C shredded cheddar cheese
2 C milk
2 C  ham, chopped

Spray a 9x13 inch baking dish with nonstick cooking spray. Layer the following ingredients in the dish: potatoes, flour, salt, pepper, onion, cheese, ham. Pour milk evenly over all. Cover tightly and bake at 350 degrees for 1 ½ hours or until potatoes are tender.

Paprika Chicken


Paprika Chicken

6 boneless, skinless chicken breasts
1 stick butter
1/2 C flour
Salt free seasoning to taste
1 Tbsp. paprika

Heat oven to 450 degrees. Melt margarine ina 9 x 13 inch baking dish, remove from oven.  Place flour, seasonings and paprika on a plate. Coat chicken with flour mix. Place chicken in baking dish in the melted butter, return to oven and bake for 1 hour, turning once during the middle of the cooking time.

Pork Roast with Vegetable Tomato Gravy


Pork Roast with Vegetable Tomato Gravy

1 (3 lb.) boneless pork roast
1 onion, chopped
2 celery stalks, chopped
1 garlic clove, minced
Oil as needed
1 (10 oz) can condensed tomato soup
1/3 C water
2 Tbsp brown sugar
2 Tbsp lemon juice
2 Tbsp Worcestershire sauce
2 Tbsp mustard

Place roast in a roasting pan and bake for 1 ½ hours at 325 degrees. In a skillet, sauté onion, celery, and garlic in oil until tender. Add remaining ingredients and simmer for 10 minutes. Pour sauce over the roast and cook an additional 30-45 minutes or until cooked though. Serve with sauce.

Crockpot Spaghetti Sauce


Crockpot Spaghetti Sauce

1 lb ground beef
3 garlic cloves, chopped
1 can-28 oz. crushed tomatoes
1 can-14 oz diced tomatoes
2 cans-8 oz each tomato sauce
2 cans- 6 oz each tomato paste
2 cans-4 oz each sliced mushrooms, drained
1 medium onion, chopped
1 medium bell pepper, chopped
salt and pepper, to taste
2 tsp. parsley
2 tsp. Italian seasoning or 1 tsp. oregano
1 Bay leaf                                   
½ cup sugar
1 cup red wine

Brown ground beef with onion, bell pepper, garlic, salt and pepper in a skillet. Place in a crockpot. Add remaining ingredients. Cook on low all day in crock pot approximately 6 hours. Serve over hot cooked pasta.

Creamed Chicken in Puff Pastry Shells


Creamed Chicken in Puff Pastry Shells

1 lb boneless skinless chicken pieces
Water as needed
Salt free seasoning to taste
1 (10 oz) pkg frozen puff pastry shells
1pkg sliced mushrooms
1 green pepper, chopped
1 small broccoli crown, florets chopped small
5 Tbsp butter
6 Tbsp flour
2 C milk
1 (2 oz) jar diced pimientos, drained
¼ tsp paprika

Place chicken in a pot and cover with water, season to taste and bring to a boil. Lower the heat and let simmer until chicken is cooked through about 20-30 minutes. Remove chicken and let cool, saving 1 cup of the cooking water. Cut into small pieces and set aside. Bake pastry shells according to package directions. In a large pot, sauté mushrooms, green pepper and broccoli in butter until tender, sprinkle with the flour. Gradually add in the milk and broth until combined well. Bring to a boil and stir until thickened. Add pimentos, paprika, and chicken, stir until heated through. Spoon into pastry shells and serve.
