Baked Potato Salad

Baked Potato Salad

4 Lg. baking potatoes, leave skins on
2 C. sour cream
3 chopped green onions
4 strips of cooked bacon, chopped
2 cups of shredded cheddar cheese
salt
pepper

Preheat oven to 400 degrees. Scrub four baking potatoes, pierce with fork and bake on a baking sheet bake in middle of oven 1 hour, or until tender. Let cool then cut potatoes (with skin) into 1/2-inch cubes. In mixing bowl, combine potato cubes, sour cream, green onion, bacon and shredded cheese. Season with salt and pepper to taste.

Happy Homemaker Monday

 


Right now I am....
Laying in bed with my dogs

Thinking....
About a tooth that is broken and infected in my mouth. Its hard to think about anything else right now.  I've been in pain for days and I can't get in to see the dentist until May 7th. I honestly don't know how I'm going to make it.


On my reading pile....

Nothing right now. My entire head hurts so I can't even read.

On my TV.....
I just want quiet.

No reading of much lately.


On the menu for this week....
Not sure how much of this I'm actually going to cook. the pain and not being able to eat does not lend much motivation to getting up and cooking.

In the craft basket....
My granny stripe blanket....I'm working on  it as I can stand it. Usually just short spurts here and there.

Looking forward to this week....
I'm looking forward to May 7th
 
Looking around the house....
Right now I don't care too much. It's not going to fall down without my attention and I seem to need rest and sleep right now more than I need to get up and clean. My family will just have to understand for right now.

We got a new puppy before my tooth got messed up. She's actually not a bad puppy. She's laying next to me right now. He name is Sora it means sky or heaven in Japanese.

Carne Asada Tortas

Carne Asada Tortas


2 lbs flap meat/flank steak

Marinade:
2 tsp garlic powder
2 tsp onion powder
2 tsp paprika
1 1/2 tsp cumin
1 tsp chili powder
1/2 tsp black pepper
1/2 tsp ground ginger
2 garlic cloves, minced
½ C lime juice
3 Tbsp oil


Combine marinade ingredients and pour over the meat. Toss to coat and let marinate overnight. Grill meat until cooked to your preference.

For the sandwiches:

6 bolillo rolls
shredded iceberg lettuce
guacamole
sliced tomatoes
crumbled cotija cheese
jalapeno slices
hot sauce


To assemble: Spread guacamole on the tops and bottoms of the rolls. Top bottom buns with meat followed by tomatoes, lettuce, cheese, jalapenos, and hot sauce. Gently press the top buns over the sandwich. Serve.

Pollo Asada


Pollo Asada

2 lbs boneless, skinless chicken breasts
1 tsp ground ginger
1 tbsp garlic powder
1/2 tsp black pepper
1/4 C lime juice
2 tsp cumin
2 tsp white vinegar
1/4 C oil
1 Tbsp dried minced onion
2 cloves garlic, minced

Combine everything except chicken in a bowl and mix well. Add chicken, toss to coat and let marinate overnight. Grill until cooked through.

Lettuce Wraps and Sesame Noodles


Lettuce Wraps

1 lb. ground chicken
4 tsp soy sauce
2 tsp rice wine or cooking sherry
2 tsp cornstarch
2 tsp oil
2 cloves garlic, minced
2 tsp fresh ginger, grated
1 small onion, diced
8 mushrooms, diced
1 small can water chestnuts, diced
1 red bell pepper, diced
4 tsp rice vinegar
3 Tbsp oyster sauce
1 head iceberg lettuce, separated into at least 12 full leaves
1 ½ C rice, cooked
1 (11 oz) can mandarin oranges, drained

In a bowl, mix the ground chicken the soy sauce, rice wine, and cornstarch and let marinate for 10 minutes at room temperature. Heat a wok or large skillet over high heat. When hot, add the oil, swirling to coat. Stir in the garlic, ginger, onion and pepper. Fry for 30-60 seconds, until fragrant. Add the ground chicken, cooking and stirring until lightly browned, about 4-5 minutes. Stir in the mushrooms, water chestnuts, rice vinegar, and oyster sauce. Simmer until the meat is cooked through, about 4 minutes. Assemble the lettuce wraps by spooning rice and filling onto each lettuce leaf and rolling up. Top with mandarin orange sections.



Sesame Noodles
12 oz soba noodles, cooked and drained
¼ C soy sauce
2 Tbsp sugar
4 cloves garlic, Minced
2 Tbsp rice wine vinegar
3 Tbsp sesame oil
4 Tbsp oil
2 Tbsp water
4 green onions, sliced

Whisk all ingredients, except noodles and green onions, together in a bowl. Add noodles and toss to coat. Add green onions and toss.
