Hot Fudge Cake


Hot Fudge Cake

1 C flour
1/4 tsp salt
2 Tbsp cocoa powder
2 tsp baking powder
1/4 C sugar
1/2 C milk
2 Tbsp shortening
Nonstick cooking spray
4 Tbsp brown sugar
2 Tbsp cocoa
2 C hot water

Mix flour, salt, 2Tbsp cocoa powder, baking powder and sugar in a bowl. Stir in milk and shortening, this will be very thick. Press into an 8x8 inch baking dish that has been sprayed with nonstick cooking spray. Mix brown sugar and 2 Tbsp cocoa, sprinkle over “crust”. Pour 2 cups hot water on top without mixing. Bake at 350°F for 40 minutes. Serve hot or warm.

Chicken and Rice Burritos

Chicken and Rice Burritos

1 recipe of Chicken Taco Meat
1 recipe Mexican Style Rice
Shredded Cheese
Burrito Size Flour Tortillas
Any other condiments you may want like salsa, guacamole, hot sauce, sour cream etc.

Make the chicken taco meat and the Mexican style rice. Place in a tortilla with cheese and whatever else you want.

Teriyaki Chicken


Teriyaki Chicken

6 boneless, skinless chicken pieces
2 C teriyaki sauce
½ C rice wine vinegar
8 cloves garlic, minced
1 Tbsp. sesame oil

Combine everything in a container and marinate overnight. Grill or broil chicken until cooked through.

Mushroom Salibury Steak


Mushroom Salisbury Steak

1 (10 oz) can cream of mushroom soup, divided                               
1 lb ground beef
1/3 C bread crumbs                                                        
1 egg, beaten
¼ C chopped onion                                                        
1 ½ C fresh sliced mushrooms
½ soup can milk

In a bowl, mix ¼ C of soup, ground beef, bread crumbs, egg and onion.  Shape into patties. Brown mushrooms in a skillet. When done remove from pan and set aside. In the same skillet, brown patties.   Drain and set aside when browned.  Add mushrooms, remaining soup and milk to skillet; return patties to skillet.  Cover and simmer on low 20 minutes or until meat is cooked through.
