Spinach and Rice
1 lb. fresh spinach
1 C rice
5 C water, divided
2 Tbsp. butter
Bring
2 C water to a boil, add rice. Cover and simmer for 15 minutes or until
cooked through. In another pot bring 3 C water to a boil then add the
spinach. Cook for 6-10 minutes or until cooked through. Drain and stir
in cooked rice. Toss with butter and serve.

Baked Parmesan Chicken
Baked Parmesan Chicken
6 boneless, skinless chicken pieces
1 C bread crumbs
1/3 C Parmesan Cheese, grated
Italian seasoning to taste
1 Tbsp. garlic powder
3/4 C melted butter
Combine bread crumbs, cheese, and Italian seasoning; set aside. Combine butter and garlic powder. Dip chicken in garlic butter then roll each piece in bread crumb mixture. Place chicken in a 9x13 inch baking dish and sprinkle with remaining bread crumb mixture. Pour on remaining butter. Bake at 350degrees for 55 minutes or until cooked through.
