Stir Fry Chicken Ramen

Stir Fry Chicken Ramen

2 Tbsp. butter
4 boneless, skinless chicken breasts, cut into bite sized pieces
1 lg onion, diced
4 pkgs chicken flavored ramen
1 bag frozen stir fry vegetables
2 tsp garlic powder
2 tsp paprika
4 C water
4 green onions, sliced,for garnish

In a large pot, melt the butter and add the chicken and onion. Cook until chicken is cooked through and onion is very tender. Add ramen flavoring packets, stir fry vegetables, garlic powder, paprika and water. Cover pot and bring to a boil, then turn heat down to low and let simmer for about 5 minutes. Add the noodles and cook for another 3-5 minutes until noodles are tender and most of the liquid is absorbed. Garnish with green onions before serving.
