Frosted Pineapple Cake


Frosted Pineapple Cake
2 C sugar
2 C flour
2 eggs
2 tsp baking soda
½ tsp salt
2 tsp vanilla
1 (20oz) can crushed pineapple, undrained

Combine all ingredients and pour into a 9x13 inch pan that has been sprayed with nonstick cooking spray.  Bake at 350°F for 30-35 minutes or until cooked through.

Frosting:

1 (8oz) pkg cream cheese, softened
1 ¾ C powdered sugar
¼ c butter, softened
¼ tsp salt
2 tsp vanilla extract

Mix all ingredients together well and spread on cooled cake.

Sweet and Sour


Sweet and Sour

2 lbs chicken, pork, or beef, cut into bite sized pieces
1 1/2 tsp. salt free seasoning
1 1/2 Tbsp sugar
2 tsp. Worcestershire sauce


Mix meat with seasoning, sugar and Worcestershire sauce. Fry until browned.

Sauce:
1 1/2 C brown sugar
3/4 C vinegar
1 1/2 C water
3-4 Tbsp cornstarch

Combine all in ingredients in a saucepan. Heat to boiling. Thicken with cornstarch as needed. Pour over meat in a 9 x 13 inch pan, bake at 350°F for 45 min to 1 hour.
