Pork Chops with Dijon
Herb Sauce
1 tsp butter
4 pork chops, bone in
Salt and pepper to
taste
1 small onion
3/4 C chicken broth
1 Tbsp Dijon mustard
2 Tbsp chopped, fresh parsley
In a large skillet, heat
butter over low heat. Season pork chops to taste with salt and pepper. Turn
heat to medium and add pork chops to the pan and cook for 7 minutes. Turn and
cook pork chops about 7 minutes more until browned and cooked through. Remove
pork chops and set aside. Add the onion to the skillet and cook until soft,
about 3 minutes. Add the chicken broth and boil until reduced to 1/2 cup, about
3 minutes. Stir in the mustard and parsley. Serve the pork chops with the sauce
over the meat.
