Southwestern Style Chicken
6 boneless, skinless chicken pieces
1 Tbsp Dijon mustard
1 Tbsp. butter
1/2 C salsa
Juice from one lime
1/4 C chopped fresh cilantro for garnish
Pound
each piece of chicken between sheets of plastic wrap to a thickness of
1/2 inch. Spread lightly with mustard. In large skillet, melt butter
over medium heat. Add chicken, and cook 3-4 minutes on each side. Stir
salsa and lime juice together and add to skillet. Simmer gently,
uncovered, until chicken is cooked through and sauce has thickened,
about 10 minutes. Sprinkle with cilantro, and then serve.
My goal this year is to get dinner on the table every day for my family. No excuses, no take out.

Homemaking Tips:::
I actually have one this week! I've been buying fruit trays at the grocery store and paying a lot for the convenience of having someone cut up my fruit for me. I went to the Farmers Market and they were handing out fruit samples from a chip and dip tray. My first thought was "hey I have one of those I never use, I could do that". So I bought a ton of fruit, cut it up, put it in the chip and dip tray and we've been eating it like crazy.

My dogs are all asleep on the bed. My daughter just got up......lazy morning.
