Happy Homemaker Monday


The Weather:::
It's 45 degrees right now it's supposed to be 75 today.

Right now I am:
Cuddled up in a grannie square blanket thinking I need some coffee.

Thinking:
Worried more than thinking. My mom is still in the hospital and my husband had to go to the ER yesterday. He's still very sick. My thoughts are about them right now.

Been watching a lot of movies. I actually have the flu so I'm not wanting to move so much.

I made a scarf for my daughter.
I made a wrap for a gift
Right now I need to finish up a throw. I only need to put on the fringe but I am putting it off for some reason. I am knitting a scarf for a friend's birthday/Christmas present. I also have a kids hat in the works but it's driving me crazy so I set it aside for right now.

I'm trying to teach myself to crochet. All I can do is make a chain and then I just mess up. I think I need a class because I need someone to show me where to stick my hook.

Pepperoni Pizza



Pepperoni Pizza
 1 recipe pizza dough (recipe below)

1 recipe pizza sauce (recipe below)

2 cups mozzarella cheese

1 pkg sliced pepperoni


Prepare pizza dough and prebake. Spread prepared sauce over pizza dough, then sprinkle with mozzarella cheese. Top with pepperoni. Bake at 400 degrees for 15 minutes or until cheese begins to brown in spots.


Pizza Dough for 2 Pizzas (12-14 inch)
      1 pkg yeast

2 Tbsp oil

1 C warm water

1 tsp. salt

3 Tbsp. sugar

3 C flour


Dissolve yeast in warm water for 5 minutes. Add sugar and mix. Add flour, salt, and oil to yeast mix. Combine well then knead until smooth and elastic about 5 minutes. Divide dough in half and spread out in greased pans, forming a rim around the edges. Bake at 400 degrees for 5 minutes before adding sauce and toppings.



Homemade Pizza Sauce

Italian seasoning to taste

1 (6 oz) can tomato paste

2 (8 oz) cans tomato sauce

Fresh minced garlic to taste


Combine all ingredients in a small saucepan and bring to a boil, simmer for about 5 minutes and then use to top pizza.

Roast Sticky Chicken



 Roast Sticky Chicken

 Preparation (the night before)
1 large roasting chicken
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 teaspoon white pepper
1 teaspoon thyme
1 teaspoon onion powder
1 teaspoon cayenne pepper
2 teaspoons paprika
4 teaspoons salt
In a small bowl, thoroughly combine all the spices. Remove giblets from chicken, clean the cavity well and pat dry with paper towels. Rub the spice mixture into the chicken, both inside and out, making sure it is evenly distributed and down deep into the skin. Place in a re-sealable plastic bag, seal and refrigerate overnight.
 
  Roast Sticky Chicken in the Crockpot

Chicken prepared last night
1 cup onion, chopped
When ready to roast chicken, stuff cavity with onions, and place in crockpot. Cook on low for 5 hours. The pan juices will start to caramelize on the bottom of pan and the chicken will turn golden brown. Use a meat thermometer to ensure that the meat is thoroughly cooked (180° is well done for a whole chicken). Let chicken rest about 10 minutes before carving/
  

Hamburger Stew


Hamburger Stew

1 lb. ground beef
1 medium onion, chopped
2 C carrots, sliced
1 pkg. sliced mushrooms
3 stalks celery, sliced
1 (15 oz) can green beans, drained
1 (15 oz) can corn, drained
1 (46 oz) can vegetable juice
2 tsp sugar

Brown ground beef in a pot. Add remaining ingredients. Bring to a boil, reduce heat to low. Cover and simmer 30 minutes or until all vegetables are tender, stirring occasionally. Freezes well if there are leftovers.
