Not a very exciting New Year's Day dinner.
After several kitchen disasters I gave up and just made myself a packet of ramen and added in some mixed vegetables.
I made frozen pizza for my family.
Some days are like that
My goal this year is to get dinner on the table every day for my family. No excuses, no take out.

Stir Fry Chicken Ramen
Stir Fry
Chicken Ramen
2 Tbsp. butter
4 boneless, skinless chicken breasts, cut into bite sized
pieces
1 lg onion, diced
4 pkgs chicken flavored ramen
1 bag frozen stir fry vegetables
2 tsp garlic powder
2 tsp paprika
4 C water
4 green onions, sliced,for garnish
In a large pot, melt the butter and add the chicken and
onion. Cook until chicken is cooked through and onion is very tender. Add ramen
flavoring packets, stir fry vegetables, garlic powder, paprika and water. Cover
pot and bring to a boil, then turn heat down to low and let simmer for about 5
minutes. Add the noodles and cook for another 3-5 minutes until noodles are
tender and most of the liquid is absorbed. Garnish with green onions before serving.

Skillet Ramen
Skillet Ramen
1 lb ground beef
2 pkgs Ramen, any flavor
1 (15oz) can diced tomatoes, undrained
1 (15 oz) can corn, undrained
1 C frozen peas
Brown ground beef. Add tomatoes, ramen
seasoning packet, corn, and peas. Break up the noodles and add. Add water if
needed to cover the noodles. Bring to a boil then cover and reduce heat to low.
Simmer 10 minutes or until noodles are fully cooked.

Chicken Fried Rice
4 C. cooked rice
1 cup diced green onions
1 package frozen stir fry vegetables
1 C. leftover chicken, cooked

pinch of salt and black pepper
2 Tbsp soy sauce
Heat wok or large skillet, add 3 Tbsp vegetable oil, add eggs and scramble in wok. Add green onions, stir fry one minute. Add rice and frozen vegetables, fry until rice is hot, then add chicken. Stir. Add soy sauce, salt and pepper Mix thoroughly.

Asian Coleslaw

package (16 ounces) shredded coleslaw mix
2 packages (3 ounces each) chicken flavor ramen noodles, crumbled
1 cup sliced almonds
1 can mandarin oranges, drained
1 cup toasted sunflower seeds
1 bunch green onions, chopped

For the dressing:
1/2 cup
sugar
3/4 cup oil
1/3 cup vinegar
2 seasoning packets from the ramen noodles
3/4 cup oil

Combine all dressing ingredients in a small bowl. In a large bowl, combine all salad ingredients. Add dressing and toss.

Egg Drop Ramen
Egg Drop Ramen
4 C water
3 eggs, beaten
3 green onions sliced
2 pkgs chicken ramen with seasoning packets
Bring water to a boil and add ramen and seasoning packets. Boil for 3 minutes or until noodles are cooked. With a spoon move noodles to one side of the pot. Slowly add eggs in a steady steam. Eggs will cook almost instantly, break apart and mix in with the noodles. Add green onions and serve immediately.

Fried Ramen
This is my comfort food...when I am sick, don't want to eat or depressed this is what I make. It's my chicken noodle soup.
There is no "real" recipe, it changes all the time depending on what I have in the house to use. For one person you need:
1 package of ramen
1/2 of included seasoning packet
1/2 C-1 C frozen veggies, defrosted
butter as needed,
Cook noodles in boiliong water for about 3 minutes. Drain well. In a skillet melt a couple Tbsps of butter. Add noodles and stir fry until they start to crisp. Throw in veggies and add 1/2 of seasoning packet that was included with the ramen. Heat and serve.
