My Husbands Favorite Carrot Cake with
Cream Cheese Frosting
Cake:
2 C. flour
2 C. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
3 C. shredded carrots
1 C. oil
4 eggs
Nonstick Cooking spray
Frosting:
6 oz cream cheese, softened
½ C. butter, softened
2 tsp. vanilla
4 ½-4 1/4 C. powdered sugar, sifted, divided
Spray a 9 x 13 inch baking dish with nonstick cooking
spray. In a large mixing bowl combine flour, sugar, baking powder, baking soda,
and cinnamon. Add carrots, oil and eggs. Beat until combined. Pour batter into
prepared pan. Bake at 350 degrees for 30-35 minutes or until a toothpick comes
out clean. Cool cake for 10 minutes then remove from pan to a wire cooling rack
to cool completely. Frost with Cream Cheese Frosting. Cover and keep in the
refrigerator any unused portion.
For the frosting beat together the cream cheese, butter
and vanilla until light and fluffy. Slowly add 2 cups powdered sugar, beating
well. Gradually add remaining powdered sugar as needed to reach a nice spreadable
consistency.
