Posole



Posole

2 lbs. boneless pork, cubed into bite size pieces
3 cloves garlic, sliced
2 (4oz) cans green chilies
2 small onions, chopped
2(15 oz) cans corn or hominy (or a combination of both)
7 C. chicken stock or broth
1/2 C salsa verde
1-4 tsp chili powder, to taste
1 tsp cumin
1 tbsp. oregano
Romaine lettuce leaves, radishes, sliced, and minced onions, limes, cilantro for garnish if desired (not on grocery list)

Combine all ingredients, except garnishes, in a large pot and bring to a boil. Cover with a lid, simmer over low heat for 40-60 minutes or until pork is tender. Add some water if too much liquid boils off.  Transfer soup to bowls and garnish if desired.
