Taco Pork Chops
4 boneless pork chops
1 onion
1 (8oz.) can tomato sauce
1 C water
1 pkt. taco seasoning
In a skillet brown pork chops with the onion. Add the tomato sauce, water, and taco seasoning. Bring to a boil and then reduce heat, cover and let simmer for about 20 minutes or until cooked through.
My goal this year is to get dinner on the table every day for my family. No excuses, no take out.

Pork and Apple Salad
Pork and Apple Salad
1 Tbsp Dijon mustard
2 Tbsp apple cider vinegar
1 Tbsp honey
1 Tbsp sage
1 lb pork tenderloin
2 apples, cored and sliced into rings
1 red bell pepper
4 C salad greens
6 Tbsp bleu cheese
Salad dressing of your choice
Heat broiler. In a bowl mix together mustard, vinegar,
honey and sage. Set aside 2 Tbsp. Add pork to the bowl and marinate for at
least 15 minutes. Place apples on a baking sheet and brush with marinade on
both sides. Broil for 2 minutes, turn, then broil 2 more minutes. Set aside to
cool. Remove tenderloin and broil until cooked through. Slice into thin pieces.
Toss together the salad, bell pepper and bleu cheese in a large bowl. Arrange
salad on plates, top with apple slices and pork slices. Serve with your
favorite dressing.

Crockpot Brown Sugar Pork Roast
1 (4-6 lb) pork roast
Salt free seasoning to taste
1 C brown sugar
2 cloves garlic, minced
1 Tbsp Dijon mustard
1 Tbsp balsamic vinegar
Place pork roast in a crockpot. Sprinkle with salt free
seasoning. In a bowl combine brown sugar, garlic, mustard and vinegar. Stir
together to make a paste, spread on top of the roast. Cook on low for 8 hours
or until cooked through. Slice and serve.

Dirty Rice
Dirty Rice
1 lb ground pork sausage
4 garlic cloves, minced
1 bunch green onions
2 C cooked rice
Cajun seasoning to taste
In a large skillet brown pork sausage until almost cooked
through. Add garlic and green onion and continue cooking until cooked though.
Add in rice and stir well. Season to taste with Cajun seasoing.

Baked Cajun Pork Chops
Baked Cajun Pork Chops
6 bone in pork chops
Cajun seasoning, to taste
Heat oven to 325°F. Sprinkle Cajun seasoning on both
sides of the pork chops. Place pork chops in a 9x13 inch baking dish and bake
for 35-45 minutes or until cooked through, turn pork chops over about half way
through cooking time.

Crockpot Chicken Fried Chops
6 pork chops
1/2 C flour
1 1/2 tsp ground mustard
1/2 tsp garlic powder
oil as needed
1 (10pz) can cream of chicken soup
1/3 C water
Mix the flour, ground mustard and garlic powder together.
Dredge the pork chops in the flour mixture and fry in a skillet in a small
amount of oil until browned. Place the pork chops in a crockpot. Mix the soup
and water together. Pour into the hot skillet, stirring to deglaze the pan. Pour
the gravy over the top of the pork chops. Cook on low for 6 hours or until
done.

Pineapple Baked Ham Steaks
2 ham steaks
1 (8 oz) can pineapple tidbits
1/4 C brown sugar
1 Tbsp cornstarch
1/8 tsp. ground nutmeg
1/3 C orange juice
Place the ham steaks in a 9x13 inch baking dish. Drain
the pineapple, reserving the juice. Add enough water to make 1/3 C. In a
saucepan, combine the brown sugar, cornstarch and nutmeg. Stir in the pineapple
juice and orange juice. Cook and stir until thickened and bubbly. Add in the
Pineapple and stir. Pour sauce over the ham. Bake at 350°F
for 20-30 minutes or until ham is heated through.
