Lemon Oregano Chicken


Lemon Oregano Chicken

6 bone-in chicken pieces, about 3 pounds
Juice from 1 lemon
2 Tbsp honey
1 Tbsp oil
3 garlic cloves, minced
2 tsp. oregano

Place the chicken in a greased 9x 13 inch baking dish. Combine the lemon juice, honey, oil, garlic and oregano and pour over the chicken. Bake, uncovered at 375°F for 45-60 minutes or until chicken is cooked through.

Banana Bread



Banana Bread

3 bananas, mashed
1 C sugar
½ C butter, softened
2 eggs
1 tsp. baking soda
1 tsp. salt
3 Tbsp hot water
2 C flour

Mix sugar, butter, and bananas. Add eggs, salt and flour, mix well. Dissolve baking soda in water and then add to bread mixture. Mix well. Pour into a greased bread pan. Bake at 350°F for 50-60 minutes or until cooked through.

Posole



Posole

2 lbs. boneless pork, cubed into bite size pieces
3 cloves garlic, sliced
2 (4oz) cans green chilies
2 small onions, chopped
2(15 oz) cans corn or hominy (or a combination of both)
7 C. chicken stock or broth
1/2 C salsa verde
1-4 tsp chili powder, to taste
1 tsp cumin
1 tbsp. oregano
Romaine lettuce leaves, radishes, sliced, and minced onions, limes, cilantro for garnish if desired (not on grocery list)

Combine all ingredients, except garnishes, in a large pot and bring to a boil. Cover with a lid, simmer over low heat for 40-60 minutes or until pork is tender. Add some water if too much liquid boils off.  Transfer soup to bowls and garnish if desired.

Hawaiian Hamburgers

Hawaiian Hamburgers

2 lbs. ground beef
4 Tbsp Hoisin Sauce
Salt free seasoning to taste
1 (20 oz) can pineapple slices
6 hamburger buns

In a bowl, combine the Hoisin Sauce, salt free seasoning and ground beef, mixing well. Form into 12 patties. Place a pineapple slice in between 2 patties a seal well around the edges. Grill until done. Serve on hamburger buns with any desired condiments.
