Crockpot Taco Meatloaf


Crockpot Taco Meatloaf

2 lbs ground beef

1 egg

1 C Fritos, Doritos or tortilla chips, crushed
 
1/2 C sour cream

2 Tbsp. taco seasoning

1/3 c C salsa

1/2 C Mexican style cheese, shredded

Nonstick cooking spray

Mix all of the ingredients in a large mixing bowl. Spray a crockpot with nonstick cooking spray, Press meat into the bottom of the crockpot. Cook on low for 8 hours or until cooked through to 160 degrees. Cut into wedges or slices to serve.

Crockpot Cheesy Potatoes and Ham

1 (32 oz) pkg frozen hashbrowns O’Brian

2 C shredded cheddar cheese

2 C sour cream

1 (4 oz) can green chilies

1 (10 oz) can cheddar cheese soup

2 C ham, cubed chopped

Pepper to taste

Nonstick cooking spray

 

Spray a crockpot with cooking spray. Mix all the ingredients in a large bowl and pour into the crockpot. Cook on low for 3-5 hours or until heated through.

Spinach Stuffed Shells


Spinach Stuffed Shells

1 (16 oz) box jumbo shells
2 Tbsp. oil
6 C packed baby spinach
32 oz ricotta cheese
2 C mozzarella cheese, shredded, divided
1 C Parmesan cheese, divided
2 eggs, beaten
1/3 C bread crumbs
1/4 C chopped fresh parsley
salt free seasoning to taste
1 (28 oz) jar marinara sauce

Cook shells according to package directions and drain.  While shells are cooking, place oil and spinach in a skillet.  Cook spinach over medium high heat until wilted. Place spinach in a large bowl and add ricotta cheese, 1C mozzarella cheese, 1/2 C parmesan cheese, eggs, bread crumbs, parsley, and seasoning to taste.  Combine filling ingredients well.  Once shells are cooked, drained and cooled a little, spoon some of the filling into each shell and lay them in a 9 x 13 inch baking dish. Pour sauce over and around shells, sprinkle with remaining cheeses and bake at 350 degrees for 30 minutes or until heated through and cheese is melted.

Crockpot Tomato Basil Soup


Crockpot Tomato Basil Soup 

 

2 (15 oz) cans diced tomatoes, undrained

1 C diced celery

1 C diced carrots

1 C diced onion

1 tsp dried oregano

1 Tbsp dried basil

4 C vegetable broth

½ C flour

1 C Parmesan cheese

½ C butter

2 C half and half

Salt free seasoning to taste

Place tomatoes, celery, carrots, vegetable broth, onion, oregano, and basil in a crockpot. Cook on low 6 hours or until all vegetables are tender. 30 minutes before serving melt the butter over low heat in a skillet and mix in flour until fairly smooth. Slowly stir in 1 C hot soup stirring until mixture is thickened. Add another 3 C of soup and stir until smooth. Pour this mixture into the crockpot. Stir well and add in the Parmesan cheese, half and half, and season to taste with the salt free seasoning.  Let warm though and serve.

Pesto, Tomato and Mozzarella Grilled Cheese

Pesto, Tomato, Mozzarella Grilled Cheese

For 1 sandwich:

2 slices of bread
Pesto as needed
2-4 slices of tomato
1-2 slices of mozzarella cheese
butter

Spread butter on outside of each slice of bread. Heat a skillet over medium heat. Spread pesto on inside of each slice of bread. Lay tomato and mozzarella on top of one slice and top with the other slice. Grill as you would any grilled cheese.

Spinach and Cheese Stuffed Portabello Mushrooms


Spinach and Cheese Stuffed Portabello Mushrooms

4 cloves garlic, minced and divided
1/2 tsp Italian seasoning, divided
2 Tbsp oil
salt free seasoning to taste
4 portabello mushrooms
1 (10oz) bag spinach
1/4 cupC grated Parmesan cheese, plus more for sprinkling topping mushrooms

1C shredded mozzarella, divided
dried basil to taste
1/4 cup C breadcrumbs
1 C marinara sauce

Heat oven to 425 degrees. Scrape the gills out of the mushroom caps and set aside. In a bowl, combine 1 clove of the minced garlic, 1/4 tsp of the Italian seasoning, oil, and salt free seasoning. Brush inside and outside of the mushrooms with the oil/garlic mixture and roast mushrooms cap side down for about 10 minutes. Blot off any water given off by the mushrooms from cooking. Heat a skillet over medium heat. Add 1 tsp oil and 2 cloves of the minced garlic. Stir for about a minute then add the spinach and cook, stirring often, until wilted. Allow to cool slightly, than drain off any liquid from cooking.  In a bowl stir together the last clove of the minced garlic, the rest of the Italian seasoning, Parmesan cheese, 3 ounces most of the mozzarella (saving some for the top), basil, breadcrumbs and spinach. Season salt free seasoning to taste. Spoon a little of the marinara into each mushroom then stuff with the spinach mixture. Spoon a little more of the sauce over the stuffed mushrooms, then sprinkle the remaining Parmesan and mozzarella over the top. Bake for 10-15 minutes or until the filling is heated through and the cheese has melted. Serve with additional marinara if desired.

Crockpot Ravioli


Crockpot Ravioli

1 bag frozen cheese ravioli

1 jar marinara sauce

1C shredded mozzarella cheese

 

Place frozen ravioli in a crockpot. Pour sauce over the pasta and toss to coat. Cover and cook on high about 3 hours. About 30 minutes before serving sprinkle with the cheese so that it has time to melt.

Roasted Garlic Macaroni and Cheese


Roasted Garlic Macaroni and Cheese

 

2 heads of garlic

Oil as needed

12 oz pasta

3 Tbsp butter

3 Tbsp flour

2 C milk

8 oz white cheddar cheese, grated

1 container garlic and herb flavor Boursin cheese

Salt free seasoning to taste

 

Heat oven to 350 degrees. Remove some of the outer wrapping on the garlic heads. Slice off the tops of the garlics. Place on a square of foil and drizzle oil over the tops and sprinkle with seasoning to taste. Wrap up tight in the foil. Bake for 40-60 minutes until you can easily squeeze out the garlic cloves. Let cool for a few minutes and squeeze out the garlic into a small bowl and mash. Set aside.  Cook pasta according to package directions. In a saucepan melt the butter over medium heat. Whisk in the flour and the mashed garlic, add in the milk slowly, stirring constantly. Cook until the sauce thickens and comes to a very low boil. Remove from heat and stir in the white cheddar and Borsin. Stir until cheese is completely melted. Combine cheese sauce with the pasta and serve.

Spinach Quiche


Spinach Quiche

1 (9 inch) pie crust

3 eggs, beaten

2 C half and half

Salt free seasoning to taste

¼ tsp dry mustard

2 green onions, sliced

1-1 ½ C spinach

1/2C Swiss cheese, grated

 

Thaw and bake pie crust for 10 minutes. Beat together eggs, half and half, seasoning, and dry mustard. Lay green onion and spinach in the pie crust, top with grated cheese Pour egg mixture over all and bake at 350 degrees for 45 minutes or until cooked through.

Black Bean Burrito Bowls


Black Bean Burrito Bowls 

Nonstick cooking spray

1 Tbsp oil

1 onion, diced

2 garlic cloves, diced

1 (15 oz) can black beans, rinsed and drained

1 (8 oz) can tomato sauce

1 tsp chili powder

½ tsp cumin

1 C cooked brown rice

1 C diced tomatoes

2 C shredded lettuce

½ C shredded cheddar cheese 

Spray a skillet with nonstick cooking spray and add oil. Heat over medium heat. Add onion and sauté until cooked through. Add garlic, black beans, tomato sauce, chili powder, and cumin. Turn heat to low and simmer for about 10 minutes. Divide rice between 4 bowls. Top with ¼ of bean mix. Top with tomatoes, lettuce and cheese.

Chicken Tacos


Chicken Tacos 

1 Tbsp oil

Nonstick cooking spray as needed

1 lb chicken breasts, sliced into strips

1 Tbsp chili powder

1 tsp cumin

3 Tbsp water

8 corn tortillas

Monterey Jack cheese as desired for garnish 

Add oil and spray a skillet with cooking spray. Heat over high heat. Add chicken and sauté until almost cooked through. Stir in seasonings and water. Cook until all liquid evaporates. Divide meat between the tortillas and garnish with cheese.

Italian Macaroni


Italian Macaroni

 

1 lb ground beef

2 (15 oz) cans diced tomatoes

2 C water

1 Tbsp Italian seasoning

2 cloves garlic, minced

Onion powder to taste

2 C elbow macaroni, uncooked

Parmesan cheese for garnish

Mozzarella cheese for garnish

 

In a large pot, cook ground beef until cooked through. Add tomatoes, water, Italian seasoning, garlic and onion powder. Bring to a boil and stir in macaroni. Turn to low, cover and simmer for 10 minutes or until pasta is tender. Before serving garnish with cheeses if desired.

Crockpot Penne


Crockpot Penne

2 (24 oz) jars pasta sauce
1 jar water
1 (15 oz) container ricotta cheese
1 egg, beaten
1/3 C grated parmesan cheese
2 C shredded mozzarella plus additional for garnish if desired
1 (16 oz) box penne, uncooked

Mix the sauce, water, ricotta, egg, in the a crockpot, mix the pasta sauce, water, ricotta, egg, parmesan and mozzarella.  Then stir in the uncooked penne.  Cook on low 4 hours or until pasta is done. Serve with additional mozzarella cheese on top if desired.

Crockpot Sausage and Pepper Sandwiches


Crockpot Sausage and Pepper Sandwiches

 

6 large Italian Sausages

1 (15 oz) can diced tomatoes

1 (15 oz) can tomato sauce

1 (6 oz) can tomato paste

1 onion, cut into slices

2 green peppers, cut into strips

6 French rolls

12 slices provolone cheese

 

Remove casings from sausages and brown in a skillet. Place sausages in a crockpot. Add tomatoes, tomato sauce, tomato paste, onion and green peppers. Stir gently to combine. Cook on low for 6 hours or until cooked through. Serve on French rolls with cheese.

Crockpot Philly Cheesesteaks

 
Crockpot Philly Cheesesteaks
2 lbs steak, sliced into strips
Salt and pepper to taste
1/2 tsp garlic powder
1 onion, sliced into strips
1 bell pepper, sliced into strips
2 C beef broth
6 French rolls
12 slices of Provolone cheese
 
Sprinkle the steak with salt, pepper and garlic powder. Place in a crockpot. Add onion, bell pepper and beef broth. Cook on low for 4-6 hours or until meat is tender and onion and bell pepper are soft. Toast rolls for a couple minutes until lightly toasted under an oven broiler. Lay a piece of cheese on both sides of the roll. Use tongs to remove meat, onions and bell pepper from crockpot draining off as much juice as you can. Pile meat on top of rolls and return under the broiler to melt the cheese for a minute or two. Serve hot.

Hot Tamale Soup

Hot Tamale Soup

1 pound ground beef
1 onion, chopped
1 bell pepper, chopped
2 garlic cloves, chopped
1 tablespoon chili powder
2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
Pinch of ground cinnamon
3 cups chicken broth
1 (14- to 16-ounce) can tomatoes, chopped, with juice
1 (15 ounce) can pinto beans, rinsed and drained
1 cup frozen corn kernels
12 (3 ounce) purchased tamales
Shredded Cheddar cheese


Heat heavy large saucepan over medium-high heat. Add ground beef, onion, bell pepper and garlic and cook until beef is brown, breaking up meat with fork. Add chili powder, cumin, cayenne and cinnamon and cook 1 minute. Add broth and tomatoes with juice. Cover and simmer 30 minutes. Stir corn and beans into soup. Simmer until corn is just heated through. Season soup with salt and pepper to taste. Heat tamales according to package instructions. Place 2 tamales into each of six bowls. Ladle soup into bowls and sprinkle with cheese.

Layered Ground Beef Casserole



Layered Ground Beef Casserole

1 lb ground beef
3 garlic cloves, minced
Salt free seasoning to taste
1 tsp sugar
2 (8oz) cans tomato sauce
8 oz egg noodles
1 C sour cream
1 (8 oz) pkg cream cheese, softened
2 C Cheddar cheese, shredded

Heat oven to 350°F. Brown ground beef and add in garlic, salt free seasoning, sugar and tomato sauce. Simmer on low for 15 minutes. Meanwhile cook and drain egg noodles according to package directions. Combine sour cream and cream cheese together in a small bowl until it resembles cottage cheese. In a 9x13 inch baking dish layer ½ the noodles, ½ the meat mixture, top with the sour cream mixture, spread out as evenly as possible, add remaining noodles, remaining meat mixture and top with the cheddar cheese. Bake for 20 minutes or until heated through and cheese is melted.

Chicken Alfredo Roll Ups


Chicken Alfredo Roll Ups

1 (16oz) box lasagna noodles
2 (15oz) jars alfredo sauce
4 chicken breasts, cooked and diced finely
oregano, to taste
garlic powder,to taste
4 C shredded Mozzarella cheese
Nonstick cooking spray

Spray an 9x13 inch baking dish with nonstick spray and pour 1 cup alfredo sauce into the baking dish and spread out evenly. Cook lasagna noodles according to package directions. Drain and rinse the noodles with cold water and blot dry. Spread about 1 Tbsp. of the alfredo sauce over each noodle. Sprinkle with oregano and garlic powder to taste. Place some chicken on top of each noodle. Sprinkle with about 3 Tbsps of mozzarella. To roll up, start at one end and roll the noodles over the toppings. Place the roll ups in the pan, one by one, seam side down.  Pour the remaining alfredo sauce evenly over the top of the roll ups. Top with remaining mozzarella. Bake at 350°F for about 30 minutes or until the cheese is completely melted.
