Roasted Garlic Macaroni and Cheese


Roasted Garlic Macaroni and Cheese

 

2 heads of garlic

Oil as needed

12 oz pasta

3 Tbsp butter

3 Tbsp flour

2 C milk

8 oz white cheddar cheese, grated

1 container garlic and herb flavor Boursin cheese

Salt free seasoning to taste

 

Heat oven to 350 degrees. Remove some of the outer wrapping on the garlic heads. Slice off the tops of the garlics. Place on a square of foil and drizzle oil over the tops and sprinkle with seasoning to taste. Wrap up tight in the foil. Bake for 40-60 minutes until you can easily squeeze out the garlic cloves. Let cool for a few minutes and squeeze out the garlic into a small bowl and mash. Set aside.  Cook pasta according to package directions. In a saucepan melt the butter over medium heat. Whisk in the flour and the mashed garlic, add in the milk slowly, stirring constantly. Cook until the sauce thickens and comes to a very low boil. Remove from heat and stir in the white cheddar and Borsin. Stir until cheese is completely melted. Combine cheese sauce with the pasta and serve.

Crockpot Salsibury Steak


Crockpot Salisbury Steak

 

2 lbs ground beef

1 pkt. onion soup mix

½ C Italian bread crumbs

1 egg

¼ C milk

Flour, as needed

2 (10 oz) cans cream of mushroom soup

1 pkt au jus mix

 

In a bowl combine ground beef, soup mix, bread crumbs, egg and milk. Form meat into 6 patties. Place a small amount of flour on a plate and coat both sides of the patties. In a skillet brown patties on both sides. Place patties in a crockpot. In a bowl mix au jus mix with amount of water listed on package. Mix in soup and pour over the patties. Cook on low for 4 hours or until cooked through.

Crockpot Bacon Cheeseburger Casserole


Crockpot Bacon Cheeseburger Casserole

Nonstick cooking spay

1 (24oz) pkg frozen cubed hash browns O’Brian, thawed

2 lbs ground beef, browned and drained

½ C real bacon bits

2 C milk

3 C cheddar cheese, shredded

3 Tbsp butter melted

Salt and pepper to taste

 

Spray crockpot with nonstick cooking spray. Combine all ingredients in a large bowl and combine gently. Pour into crockpot. Cook on low for 4 hours or until cooked though. Serve with a slotted spoon.

Crab Newburg



Crab Newburg

6 Tbsp butter
6 Tbsp flour
1 tsp paprika
1 tsp Old Bay Seasoning
¾ C water
2 C milk plus additional if needed
½ C white wine
1 ½ lb imitation crab meat
8 oz linguini, cooked and kept warm

Melt butter in a large skillet, add flour and seasonings. Add water and milk, stirring constantly stirring. Add wine and continue stirring until thickened and smooth. If sauce becomes too thick add a small amount until desired consistency. Add the crab and stir gently until heated through. Serve over pasta.

Garden Frittata

Garden Frittata

3 Tbsp. butter
1 small onion, chopped
2 bell peppers, chopped
6 eggs
1/4 C milk
Italian seasoning to taste
1 C shredded Monterey Jack cheese

Melt the butter in an oven proof skillet. Sauté the onions and peppers until tender. Beat the eggs, milk, and Italian seasoning together. Pour over the onion/pepper mixture in the skillet. Let cook over medium heat, without stirring until the middle is set, about 7-9 minutes. Place in the oven, under the broiler until browned.

Chicken Casserole with Corn and Peas


Chicken Casserole with Corn and Peas

2 C chicken, cooked, cubed
2 C corn
2 C peas
4 1/2 Tbsp butter
4 1/2 Tbsp flour
1 1/2 C chicken broth
1 1/2 C milk
salt and pepper to taste
1/2 C seasoned bread crumbs
1/2 C cheddar cheese, shredded
Nonstick cooking spray

Combine the chicken, corn and peas in a 9x13 inch baking dish that has been sprayed with nonstick cooking spray. Melt the butter in a saucepan, stir in the flour and cook for a minute or two to combine. Add in the chicken broth and milk, whisking until smooth and thickened. Season with salt and pepper. Pour the sauce over the chicken and vegetables. Top with cheese and bread crumbs. Bake at 350°F for 45 minutes to 1 hour until bubbly and heated through.

Ham and Broccoli Rolls

Ham and Broccoli Rolls

6 slices deli ham, cut into thick slices
1 bunch broccoli, cut into florets and cooked until tender
2 Tbsp. butter
2 Tbsp. flour
2 C milk
1 tsp. mustard
1 C shredded Swiss cheese
Salt free seasoning to taste

Melt butter in a saucepan. Whisk in flour and gradually add the milk, whisking until smooth. Stir in the mustard and cheese. Cook until thickened and cheese is melted. Season to taste. Assemble the rolls by placing some broccoli in the middle of a slice of ham and roll it up. Place seam side down in a 9x13 inch baking dish. Pour sauce over the top of the rolls. Bake at 350°F for 20-30 minutes, or until hot and bubbly.

Easy Cheeseburger Pie

Easy Cheeseburger Pie

1 lb. ground beef
1 large onion, chopped
1 (4 oz) can diced green chilies
1 C shredded Cheddar cheese
1/2 C baking mix
1 C milk
2 eggs
Nonstick cooking spray

Heat oven to 400 degrees. Spray a 9 inch pie plate with nonstick cooking spray. Cook beef and onion in a skillet until beef is brown; drain off any fat. Spread in pie plate; layer chilies, and cheese on top. Combine biscuit mix, milk and eggs. Pour into pie plate over beef mixture. Bake about 25 minutes or until bubbly and cooked through.

Chicken Tetrazzini


Chicken Tetrazzini

1(10 oz) pkg spaghetti cooked and drained
3 C shredded cheddar jack cheese , divided
3 Tbsp. butter
1 onion, diced
1 red bell pepper, diced
1(10oz) can cream of mushroom soup
1 (10oz)can cream of chicken soup
1 soup can milk
2 C cooked, diced chicken
salt & pepper to taste

Sauté onions and red pepper in butter until soft. Mix onions and peppers with spaghetti, 2C of the cheese, soups, milk, and chicken in a large bowl. Season to taste with salt and pepper. Pour mixture into a 9x13 inch baking dish and top with remaining cheese. Bake uncovered at 350°F until bubbly and heated through about 30-40 minutes.
