Broccoli Cheese Soup
2 ½ C. broccoli, fresh or frozen
1 small onion, minced
2 C. chicken broth
1 Tbsp. flour
½ tsp. garlic powder
Salt and pepper to taste
2 C. milk
2 C. cheddar cheese, shredded
In a saucepan combine broccoli, onion and broth. Bring to
a boil. Turn down heat and simmer for about 10 minutes or until the broccoli is
tender. Add flour, garlic powder, salt and pepper. Slowly stir in milk and then
add cheese. Cook over low heat until the cheese is melted. Do not bring to a boil.

ReplyDeleteI love broccoli cheese soup, but I had to laugh when I saw this photo because my very first thought was, "Is it ever wise to serve food against a background of skull and crossbones?" Might just be me, but it made me laugh. I will be trying this recipe soon!
