Crockpot Beef, Tomatoes and Peppers
1 1/2 lbs beef, cut up into bite size pieces
No salt seasoning
2 Tbsp oil
3 Tbsp tomato paste
1 (15oz) can stewed tomatoes, undefined
3 Tbsp Worcestershire sauce
1 bag frozen peppers and onions
Sprinkle meat with seasoning and heat oil in a skillet. Brown meat and place a crockpot. In a bowl combine tomato paste, stewed tomatoes, and Worcestershire sauce. Pour over the meat. Pour bag of frozen peppers and onions on top. Cover and cook on low for 6-8 hours.
My goal this year is to get dinner on the table every day for my family. No excuses, no take out.

Crockpot Mediterranean Garlic Chicken
Crockpot Mediterranean
Garlic Chicken
6
boneless, skinless chicken pieces
1
(15 oz) can diced tomatoes
1
(15 oz) can stewed tomatoes
1
(6oz) can tomato paste
1
onion, sliced
1
(4 oz) can sliced black olives
1
whole head garlic, separated into peeled cloves, whole
salt
and pepper to taste
Parmesan
cheese, for garnish
1
(8oz) box angel hair pasta, cooked and kept warm
Place
the chicken breasts in the bottom of a crockpot. Add remaining ingredients
except cheese; stir to combine. Cover and cook on low for 6 hours or done.
Serve over angel hair pasta. Top with Parmesan cheese if desired.

Beef Stew with Dumplings
6 slices bacon, chopped
1 lb. beef stew meat
1 large onion, chopped
2 carrots, chopped
1 (8 oz) pkg. mushrooms, sliced
3 medium potatoes, peeled & cut into chunks
1 (15 oz) can stewed tomatoes, undrained
1 (15 oz) can beef broth
Dumplings:
1 ½ C flour
3 ½ tsp baking powder
½ tsp salt
¾ C. milk
In a large pot cook bacon until browned. Add onion and mushroom and cook on med. high for about 10 min. until softened. Add beef, carrots, potatoes, tomatoes, and broth to the pot. Bring to a boil, reduce heat to low, cover and simmer about an hour and 15 min. Prepare dumplings by combining the ingredients together and drop on top of the stew, cover and let cook without lifting the lid for 10 minutes or until raised and fluffy.
