Easy Cheeseburger Pie
1 lb. ground beef
1 large onion, chopped
1 (4 oz) can diced green chilies
1 C shredded Cheddar cheese
1/2 C baking mix
1 C milk
2 eggs
Nonstick cooking spray
Heat
oven to 400 degrees. Spray a 9 inch pie plate with nonstick cooking
spray. Cook beef and onion in a skillet until beef is brown; drain off
any fat. Spread in pie plate; layer chilies, and cheese on top. Combine
biscuit mix, milk and eggs. Pour into pie plate over beef mixture. Bake
about 25 minutes or until bubbly and cooked through.

I have made something like this, but never with the green chilies in it. What a great recipe. Love your side dishes too!
