Happy Homemaker Monday

The Weather:::
It's starting to feel like fall....sort of.....it will be in the 80s later this week, I just wish it would stay cooler.

Right now I am:
Thinking about what I have to do today and dreading getting it done.

Thinking:
About my mom. She is in a Skilled Nursing Facility and they are not caring for her properly so I have to go and fight for her rights today. I really hate coming off as mean and well not so nice.....but I am angry and something needs to be done.

On the menu for this week:::

With my mom not well I didn't really make a menu. I'm still wondering how I'm going to pull off Thanksgiving.

On my to do list:::
Go to the hospital
Go to the Skilled Nursing Facility
Try to get some stuff done at home
Work

What I am sewing, crocheting, knitting or creating:::
I am making the dishcloth pattern Sandra posted. I was so happy to see it. I had lost it and forgotten how to do this pattern. I want to make at least 4 of them for my mother in law. I am over half way done with the first one right now.

Looking around the house:::
Its a mess but I don't have time to deal with it right now.

Crockpot Chicken and Green Bean Bake


Crockpot Chicken and Green Bean Bake

6 boneless, skinless chicken pieces
Salt free seasoning to taste
1 (10 oz) can cream of mushroom soup
½ C milk
1 (15 oz) can green beans, drained
1 small can French Fried onions

Place chicken in a crockpot and season to taste. Cover and cook on low for 3-4 hours or until chicken is cooked through. Add soup, milk, and green beans, stir gently to combine. Sprinkle French Fried onions on top. Cover and cook on low for another 30 minutes or until heated through.

Cheesy Potatoes and Sausage

Cheesy Potatoes and Sausage

1 (32 oz) frozen cubed hashbrowns, partly thawed
1 lb sausage, like polish, smoked or kielbasa
1 onion, diced
1 (10 oz) can cheese soup
1 ¼ C milk

Combine everything in a slow cooker, mix well. Cover and cook on low for 8 hours or until cooked through.

Chicken Tacos


Chicken Tacos

1 lb boneless skinless chicken pieces
1 packet taco seasoning or homemade equivalent
tortillas as needed
Assorted condiments such as cheese, salsa, or sour cream

Combine all ingredients in a crockpot ; cook 6-8 hours on low. Remove chicken and shred with a fork. Serve on warmed tortillas with cheese, salsa, sour cream or anything your family likes on their tacos.

Crockpot Orange Chicken



Crockpot Orange Chicken

4 boneless chicken breasts, chopped into bite sized pieces
1/3 C flour
oil, as needed
1 tsp balsamic vinegar
3 Tbsp ketchup
6 oz. frozen orange juice concentrate, thawed
4 Tbsp brown sugar

In a bowl, mix the orange juice, brown sugar, vinegar, and ketchup. Coat the chicken in flour, shaking off any extra. Heat a small amount of oil a skillet and brown the chicken. The chicken doesn't need to be fully cooked just browned since it will finish cooking in the crock pot. Place chicken in the crockpot and the pour the sauce over, stir to coat the chicken with sauce. Cook on low for 5-6 hours or until cooked through.

Chicken and Rice

Chicken and Rice

6 boneless, skinless chicken pieces
1 (10 oz) can cream of mushroom soup
1 (4 oz) can sliced mushrooms, drained
1 1/3 C water
¾ C raw long grain white rice
¼ tsp paprika
Salt free seasoning to taste

Combine soup, mushrooms, water, rice and paprika in a 9 x 13 inch baking dish. Mix well. Lay chicken pieces on top of mixture and season to taste with salt free seasoning. Cover with aluminum foil tightly and bake at 375°F for 45 minutes or until chicken is cooked though and the rice is done.
