Smothered Steak with Mushrooms and Onions
Smothered Steak with Mushrooms and Onions
2 lbs. ground beef
1 C bread crumbs
Salt free seasoning, to taste
1 (8 oz) pkg mushrooms, sliced
1 large onion, sliced
2 pkgs brown gravy mix
2 C water
Combine the ground beef, bread crumbs, and seasoning.
Shape into patties. In a skillet, brown the patties on both sides, they just
need to be browned they will finish cooking in the oven. Remove the meat from
the skillet and place in a 9x13 inch baking dish. Add the mushrooms and onions
to the skillet and sauté about 10 minutes or until soft and tender. Whisk the
gravy mixes and water together and add to the skillet, cook until thickened, about
5 minutes. Pour the contents of the skillet over the top of the meat. Bake at
350° for 40-60 minutes or until meat is cooked through and tender.

My dog broke her leg. Spent most of the day at the vet. No one felt like eating. We were all worried about the surgery she had to have.

Sauteed Summer Squash
French Bread
Wednesday-
Pulled Pork Sandwiches
Cole Slaw
Thursday-
KFC- too hot to cook, to tired, we brought the puppy home
Friday-
Crockpot Chicken Enchiladas
Mexi-Corn
Saturday-

Honey Glazed Carrots
Brown Sugar Acorn Squash

Honey Cashew Pork
1 C orange juice
½ C honey
¼ C soy sauce
4 tsp. corn starch
1/4 tsp. ground ginger
3 carrots, sliced
2 celery stalks, sliced
1lb pork, cut into bite sized pieces
2/3 C cashews
oil as needed
Combine orange juice, honey, soy sauce, cornstarch and
ginger in a bowl, set aside. Over medium heat, heat some oil in a wok or large
skillet. Add the carrots and celery and cook until almost tender, about 5
minutes. Add more oil if needed add the pork stir fry until cooked through. Add
the sauce add heat until it comes to a boil. Cook until sauce is thickened. Add
cashews and stir to combine. Serve over rice.

Crockpot Chili
Crockpot Chili
2 lbs ground beef
1 onion, chopped
3 cloves garlic, minced
2 (6oz.) cans tomato paste
2 tomato paste cans of water
1 (15oz) can kidney beans, rinsed and drained
2 pkg chili seasoning mix
1(15oz) can diced tomatoes, undrained
1 (4oz) can green chiles or jalapenos, diced
Shredded Cheddar cheese, sour cream, and sliced green onions for garnish if desired.
Brown the beef, onion and garlic. Drain off any fat. Add
all ingredients into a crockpot. Cook on low for 5 or 6 hours. Garnish if desired and
serve.

Complete BBQ Chicken Dinner in the Crockpot
6 boneless, skinless chicken breasts, frozen
½ C barbecue sauce
6 potatoes, peeled and chopped
1 C cheddar cheese, shredded
1 medium onion, diced
salt and pepper, to taste
olive oil, as needed
6 frozen ears corn on the cob
Place the chicken in the bottom of the crockpot. Brush
with barbecue sauce lightly. Combine the potatoes, a small amount of olive oil,
onion, cheese, salt and pepper together in a bowl. Make a large packet out of foil
and wrap the potatoes in it. Wrap each ear of corn separately in foil. Place
the potatoe packet on top of the chicken the place the wrapped ears of corn on
top of that. Cook low for 7-8 hours or until cooked through and everything is
warmed up.
