Cheese Steak Sandwiches


Cheese Steak Sandwiches

6 small thin steaks
Salt free seasoning to taste
1-2 Tbsp. oil  
1 onion, sliced
2 bell peppers, any color
6 sandwich rolls
Butter as needed for toasting rolls
provolone cheese or cheese whiz

Season steaks to taste. Heat oil in a skillet over high heat. Cook steak on both sides until well browned and cooked to desired doneness. Set aside. Cook onion and peppers in the same skillet, using more oil if needed,until soft, about 10 minutes. Remove and set aside.
Butter and toast sandwich rolls under the broiler until lightly toasted. Slice meat into thin slices. Divide meat into serving size portions and place in a pile in the skillet. Top with peppers and onions then your choice of cheese. Allow to cheese to melt and meat to get slightly reheated. Use a spatula to place meat and onion/peppers onto a toasted bun.

Chicken Tetrazzini


Chicken Tetrazzini

1(10 oz) pkg spaghetti cooked and drained
3 C shredded cheddar jack cheese , divided
3 Tbsp. butter
1 onion, diced
1 red bell pepper, diced
1(10oz) can cream of mushroom soup
1 (10oz)can cream of chicken soup
1 soup can milk
2 C cooked, diced chicken
salt & pepper to taste

Sauté onions and red pepper in butter until soft. Mix onions and peppers with spaghetti, 2C of the cheese, soups, milk, and chicken in a large bowl. Season to taste with salt and pepper. Pour mixture into a 9x13 inch baking dish and top with remaining cheese. Bake uncovered at 350°F until bubbly and heated through about 30-40 minutes.

Cheesy Tuna Noodle Casserole



Cheesy Tuna Noodle Casserole

1 small onion, chopped
2 Tbsp. butter
1 (10 oz) can cream of celery soup
1/3 C milk
2 C egg noodles or rotini pasta, cooked and drained
2 (6oz) cans tuna, drained
2 C cheddar cheese, divided
1/4 C Parmesan Cheese, grated
2 Tbsp. chopped pimiento

Heat oven to 350°F. Cook and stir onion in butter in large saucepan over medium heat until tender but not browned. Add soup, milk, noodles, tuna, 1 cup of the cheddar cheese, the Parmesan cheese and pimento; mix well. Spoon into a casserole dish. Top with remaining cheddar cheese. Bake for 25-30 minutes or until bubbly.
