Easy Dinner Rolls


Easy Dinner Rolls 

2 1/2 C. warm water
2 Tbsp. yeast
2/3 C. sugar
6 - 8 C. flour
2 eggs, beaten
1/3 C. shortening, melted and cooled
1 1/4 C. powdered milk
1 Tbsp. salt

In a large bowl, dissolve yeast in warm water with the sugar; let stand 5 minutes or until frothy on top.  Add two cups of the flour along with the remaining ingredients.  Stir together until combined.  Stir in remaining flour, 1 cup at a time until a soft dough forms.  It should pull away from the sides of the bowl.  Use as little flour as possible, so your rolls will be soft.  Knead dough, by hand, just a few times in the bowl.  Cover and let rise until doubled about an hour.  Roll out to 1/2'' thickness on a lightly floured surface.  Spread with 2 Tbsp. softened butter.  Cut into strips and roll up.  Lay seam side down on greased baking sheet.  Cover and let rise until doubled about an hour.  Bake at 350°F for 15-20 minutes or until tops are browned.  Remove from oven and brush tops with melted butter.

Skillet Kielbasa

Skillet Kielbasa

2 lbs. kielbasa, sliced
1 lg onion, sliced thinly
1 C apple cider vinegar
1 C brown sugar

In a large skillet heat vinegar and brown sugar over medium heat until sugar is dissolved. Add onions and sausage. Cook for 15 minutes, covered, stirring occasionally. Cook uncovered for an additional 5-10 minutes.

Oven BBQ Pork Chops and Cooked Apples

Oven BBQ Pork Chops
1 sm. onion, diced
3 Tbsp. butter
1 C. ketchup
1/3 C lemon juice
2 Tbsp brown sugar
½ C water
2 tsp mustard
1 Tbsp. Worcestershire sauce
6 pork chops
Flour as needed
Oil as needed

Cook onion in butter in a saucepan until tender. Add ketchup, lemon juice, brown sugar, water, mustard, and Worcestershire sauce to saucepan. Cover and simmer for 15 min. Roll pork chops in flour and brown in oil in a skillet. When browned place pork chops in a 9x13 inch baking pan and pour sauce over. Place in a 350 degree oven and bake for 45 min. or until done.


Cooked Apples
6 Granny Smith apples, peeled, cored, and sliced
2 T. sugar
1/4 tsp. cinnamon
1 tsp. vanilla
2 T. water

Combine all ingredients in a saucepan and simmer until apples are tender. Serve hot or cold.

Frosted Pineapple Cake


Frosted Pineapple Cake
2 C sugar
2 C flour
2 eggs
2 tsp baking soda
½ tsp salt
2 tsp vanilla
1 (20oz) can crushed pineapple, undrained

Combine all ingredients and pour into a 9x13 inch pan that has been sprayed with nonstick cooking spray.  Bake at 350°F for 30-35 minutes or until cooked through.

Frosting:

1 (8oz) pkg cream cheese, softened
1 ¾ C powdered sugar
¼ c butter, softened
¼ tsp salt
2 tsp vanilla extract

Mix all ingredients together well and spread on cooled cake.

Sweet and Sour


Sweet and Sour

2 lbs chicken, pork, or beef, cut into bite sized pieces
1 1/2 tsp. salt free seasoning
1 1/2 Tbsp sugar
2 tsp. Worcestershire sauce


Mix meat with seasoning, sugar and Worcestershire sauce. Fry until browned.

Sauce:
1 1/2 C brown sugar
3/4 C vinegar
1 1/2 C water
3-4 Tbsp cornstarch

Combine all in ingredients in a saucepan. Heat to boiling. Thicken with cornstarch as needed. Pour over meat in a 9 x 13 inch pan, bake at 350°F for 45 min to 1 hour.
