Steak Fajitas


Steak Fajitas 

1/2 c. oil
1/3 c. lime juice
1 pkg. dry Ranch dressing mix
1 tsp. cumin
1/2 tsp. black pepper
2 lbs. steak, sliced into strips
2 peppers, any color, sliced
1 onion, sliced
Lettuce, salsa, sour cream, or other condiments of your choice (not on list)

Combine oil, lime, ranch dressing mix, cumin, and pepper; pour over steak. Refrigerate overnight. Pan fry meat until cooked to your preference with peppers and onion. To serve, roll up in tortillas with condiments of your choice.

Seven Layer Dip


7 Layer Dip

1 pkg. taco seasoning
1-8 oz. container sour cream
1-16 oz. can refried beans
2 avocados, mashed with lemon juice
1 cup Monterey jack cheese, shredded
1 cup cheddar cheese, shredded
3 tomatoes, chopped fine
1/2 cup green onion, sliced
1-15 oz. can black olives, chopped
tortilla chips

Mix taco seasoning into the sour cream (you may want to use less than one package depending on taste). Layer in a 5x9 oblong casserole dish or in a glass bowl in the following order: bean dip, avocados, sour cream mixture, jack cheese, cheddar cheese, tomatoes, green onions, and black olives. Serve with tortilla chips.

Chicken Nuggets



Chicken Nuggets

4 boneless, skinless chicken breasts
1/2 C. bread crumbs
1/4 C grated Parmesan cheese
1 tsp. salt
1/4 tsp. thyme
1 tsp. basil
1/2 C. butter, melted

Cut chicken into bite-size pieces. Mix dry ingredients. Dip chicken into butter, then into crumb mixture. Bake on a foil lined baking sheet at 400°F for 10 minutes or until cooked through.

Pulled Pork Sandwiches

Pulled Pork Sandwiches

1 (2-3) lb pork roast
Seasoning salt to taste
Water if needed
1 bottle bbq sauce
6 hoagie rolls

Place pork roast in a crockpot and season to taste with seasoning salt. Cook on low 8-10 hours or until tender. Add a small amount of water to bottom of the crockpot if needed. Once roast is fully  cooked  shred the meat and return to the crockpot, stir in the bbq sauce and serve on rolls.

Crockpot Country Pork Ribs

3 lb country pork ribs
1 bottle BBQ sauce; your choice
1 onion; diced

Place all ingredients in crockpot, cook on low 6-8 hours.
