Almost Everything Cookies

Almost Everything Cookies

1 1/2 C peanut butter
2 sticks butter
3 eggs
1 C sugar
1 C brown sugar
4 1/2 C oatmeal
2 C chocolate chips
2 C M&Ms
1/2 tsp. vanilla
1/2 tsp. corn syrup
2 tsp. baking soda

Cream the butter and sugar together. Add the peanut butter and eggs. Mix in
the remaining ingredients. Bake at 350° F for 12 minutes.

Baked Pasta with Spinach and Cheese

Baked Pasta with Spinach and Cheese

10 ozs pasta such as fusilli or cavatappi
1 (5 oz) pkg fresh spinach
Oil as needed
1 lg onion chopped
¼ C flour
4 garlic cloves, minced
2 1/2 C milk
1/2 C white wine
2 C Parmesan cheese, divided
pepper to taste
Non stick cooking spray
1 C panko breadcrumbs

Heat oven to 350°F.  Cook pasta according to package directions. Remove from heat; stir in spinach. Let stand until spinach wilts. Drain pasta mixture well. Heat a small amount of oil in a skillet. Add onion and sauté until browned . Add flour and garlic; cook 1 minute, stirring constantly. Gradually add milk and wine; cook until sauce boils and thickens, stirring constantly. Stir in 1 cup cheese and mix in well. Remove from heat; season with pepper to taste. Add pasta mixture to onion mixture, and toss gently to coat. Pour pasta mixture into a 9 x 13 inch baking dish coated that has been sprayed with nonstick cooking spray. Sprinkle half of the panko breadcrumbs over pasta, and top evenly with remaining cheese. Sprinkle the remaining half of panko breadcrumbs over cheese. Bake at 350°F for 30 minutes or until browned and bubbly.

Hawaiian Hamburgers

Hawaiian Hamburgers

2 lbs. ground beef
4 Tbsp Hoisin Sauce
Salt free seasoning to taste
1 (20 oz) can pineapple slices
6 hamburger buns

In a bowl, combine the Hoisin Sauce, salt free seasoning and ground beef, mixing well. Form into 12 patties. Place a pineapple slice in between 2 patties a seal well around the edges. Grill until done. Serve on hamburger buns with any desired condiments.

Marinated Grilled Steaks and Crockpot Corn


Marinated Grilled Steaks

Zest of two lemons
Juice from lemons
1 C soy sauce
2/3 C hoisin sauce
8 cloves of garlic, minced
½ tsp. crushed red pepper flakes
4-6 steaks

Place steaks in a large bowl. Mix all marinade ingredients in a separate bowl and pour over the steaks. Let marinate overnight in the refrigerator. Grill until done.



 Crockpot Corn

2 packages (16 ounces each) frozen corn
1 large package (8 ounces) regular cream cheese
1/2 cup (1 stick) margarine
2 tablespoons sugar
2 tablespoons water

Place frozen corn in slow cooker. Cut cream cheese and margarine into small cubes. Add to corn, along with sugar and water. Cover with lid and cook on high about 45 minutes. Stir with wooden spoon. Reduce slow cooker setting to low and cook 3 1/2 hours more, stirring occasionally.

Crockpot Steak

6 steaks
2 Tbsp. steak sauce
2 Tbsp. Dijon mustard
½ C. white wine

Place steaks in the crockpot. Combine remaining ingredients and pour over steak. Cook on low for 6 hours or until done

Crockpot Beef Roast with Vegetables

Crockpot Beef Roast with Vegetables

1 (3 lb.) beef roast
½ C water
4 potatoes, chopped
1 onion, chopped
4 celery stalks, chopped
4 carrots, chopped
1 (15 oz.) can tomato sauce

Place roast in a crockpot with water in the bottom. Add vegetables, and then pour tomato sauce over the top. Cook on low for 6 hours or until done.

Orange and Chili Pork Ribs

3 lbs. country style pork ribs
½ C ketchup
¼ C. orange marmalade
¼ C. apple cider vinegar
2 Tbsp. soy sauce
2 Tbsp. brown sugar
2 tsp. chili powder
¼ tsp. cumin
¼ tsp. ground ginger
3 cloves garlic, minced

Place ribs in a crockpot. Combine remaining ingredients to make a sauce. Pour sauce over the ribs. Cook on low for 6-8 hours or until done.

Arroz con Pollo and Mexican Corn on the Cob

Arroz con Pollo

6 strips bacon, halved
1 onion, chopped
1 garlic clove, minced
1/4 C oil
3 lbs. chicken pieces
1 C rice, uncooked
2 tomatoes, chopped
1 tsp cumin
1 1/2 C chicken broth
salt and pepper, to taste
1 C frozen peas, defrosted

Fry bacon lightly in a large pot. Once the bacon is slightly cooked add onion and garlic and sauté until slightly cooked. Add oil to the pot and add chicken to brown. Add rice and cook for about 3 minutes. Stir in tomatoes and cumin. Sprinkle with salt and pepper, then pour broth over all. Cover pan tightly and simmer for 30 minutes without lifting the lid. When done stir in the cooked green peas, and serve.

 
Mexican Corn on the Cob
6 ears of corn
Mayonnaise to taste
Dry parmesan cheese

Cook corn until done. When corn is done allow to cool slightly and brush entire cob with mayonnaise then roll in the cheese.

What three celebrities would you most like to be BFF’s with?

I can't name very many people that people consider to be celebrities today. I'm pretty much stuck in the past. I like black and white movies and old tv shows. 
 This is Frances Bavier, she played Aunt Bee on The Andy Griffith show. I don't know if she was anything like Aunt Bee. I would want to be friends with Aunt Bee. I want her recipes. Besides she was just so sweet but could handle her business. 

Lucille Ball.....so pretty, so funny. Who wouldn't want to be her friend?

 
Marlene Dietrich- She was sassy! I like sassy.

Chicken and Dressing Casserole


Chicken and Dressing Casserole

2-4 C cooked chicken, diced
1(6 oz) box cornbread stuffing mix
1 (14 oz) can chicken broth
3 Tbsp. butter, melted
1 1/3 C milk
1 (10 oz) can cream of chicken soup

Place chicken in the bottom of a 9x 13 inch baking dish. In a bowl combine butter, chicken broth, and stuffing mix. Set aside. In another bowl combine milk and soup, mixing well. Pour the soup mixture over the chicken and then top with the stuffing mix. Bake at 350°F for 30-40 minutes or until browned on top.

Huesos


Huesos

2 racks pork spare ribs ribs, cut down the middle by the butcher, then cut into serving size pieces
Salt and pepper to taste
Oil as needed
2 large cans or more of red chili sauce, preferably hot, can substitute enchilada sauce
2 Tbsp oregano
6 cloves garlic, minced
2 Tbsp flour


Salt and pepper  the pork rib pieces then brown them in a small amount of oil. Place in a large pot and cover with the red chili sauce. Add oregano and garlic. Let cook on low heat for several hours until meat is almost falling off the bones. Just before you are ready to serve remove a small about of sauce and blend in flour. Add mixture back to the pot and allow to thicken for a few minutes.
